Recipe – Shiitake Miso Soup

One of my go-to meals when I’m in a hurry and want something tasty and filling but with low calories is this recipe for shiitake and miso soup. It’s great if you are trying to lose weight, but it’s also a great pick-me-up if you’re feeling unwell or a bit blue.

Ingredients:

1 small onion (halved and thinly sliced)

6 oyster mushrooms (thinly sliced)

1 handful of various mushroom types

2 single sachets miso paste (about 2 tablespoons) 

2 sachets of miso soup garnish (includes seaweed)

2 cups of boiling water

1 tablespoon of olive oil 

1 sliced spring onions for garnish

Method:

Put miso paste in a small bowl (with garnish if using) and add the boiled water, stir then set aside.

In a small fry pan on medium-high heat, add olive oil and then the sliced onions. Soften for two minutes and then add the sliced oyster mushrooms and mushroom medley. Sauté gently until the onions have softened and the mushrooms have browned. This should take about 4-5 mins, but experiment until the mushrooms are to your liking.

Turn down the heat and add the miso soup with garnish. Simmer gently for 2-3 minutes.

Transfer the finished soup to bowls and garnish with sliced spring onion.

Serves 2.

Note – this recipe originally had shiitake mushrooms, but I find I prefer oyster mushrooms.
